Zoodles (zucchini-noodles) are a Paleo staple. Since pasta is no longer in the game, we have to find diff ways to make noodles or put your saucy foods on. I do miss slurping up good ol’ meat sauce spaghetti. With zoodles though, you seriously get that pasta feel and they taste pretty noms too.
I bought this GEFU spiral cutter on Amazon. It cost between $20-$30. It. Is. Amazing! I used to make zoodles by slicing zucchini thinly. That took FOREVER. Then I tried a Julienne peeler. That was better but my noodles were pretty short and I couldn’t “noodle” all of my zucchini. I didn’t want to get one of those GIGANTIC spiral cutter machines either because I just don’t have enough room in my kitchen. The GEFU spiral cutter is small, easy to store and makes long noodles!!! They aren’t super easy to clean though. I did get some zoodle pieces stuck in the sharp thingies….
Zoodle Ingredients:
- 4 large zucchinis
- ghee/coconut oil
- garlic pow
- olive oil
Meat Sauce Ingredients:
- 1 lb (grass-fed) ground beef
- 1 yellow onion
- 2-3 roma tomatoes
- 1/2 bulb garlic
- olive tapenade
- tomato paste OR tomato sauce
- garlic pow
- black pepper
- thyme
- parsley
- sage
- balsamic vinegar
Zoodle Directions:
- chop the ends off the zucchini
- spiral them babies
- you get left with little zucchini stumps. i chopped them up & save them for breakfast egg scrambles.
- saute zoodles in ghee/coconut oil
- sprinkle with garlic pow
- they should cook up pretty quickly bc the zucchini is so thin
- don’t cook them too long or they’ll get soggy. you want them a tiny bit crunchy still!
- mix & set aside
- drizzle with olive oil
Meat Sauce Directions:
- saute chopped garlic & diced onions in ghee or coconut oil
- add chopped tomatoes
- once those cook down a bit, make a hole in the middle of you large saute pan & add your ground beef
- add spices: garlic pow, black pepper, thyme, parsley, sage & balsamic vinegar
- brown the beef
- mix together
- add 2 tbsp olive tapenade (I use Trader Joe’s)
- add your canned/jarred tomato sauce (make sure the only ingredient is tomatoes and some spices/garlic are ok too)
- OR you can make your own tomato sauce by adding a can of tomato paste & adding water until you get the consistency you like
- mix and let simmer on stove until you are ready to eat!
This meal was seriously super tasty! It’s your Paleo un-pasta dish. You won’t miss spaghetti when you eat this. I’m going to try using my spiral cutter with carrots, yellow squash, sweet potatoes… so much to try! Can’t wait.
While making this meal, I ran out of my favorite ghee: OMGhee. #halp :(
But I just ordered two more 16 oz bottles, so all is good in the world again. :)
